I’ve been meaning to write about this for a few days…but i just haven’t had time…so here i am now.
As you know, i live in italy and pesto is big here…but unfortunately all of the pesto that is widely available (most supermarkets) has parmesan and/or pecorino cheese.
So i’ve decided to take things into my own hands, and make my own ๐
I bought 3 small glass jars + lids, 3 bunches of basil, garlic, extra virgin olive oil, himalayan salt and pine nuts, walnuts and almonds ๐
I made 3 different types of pesto. To make 1 kind, in the blender i blended 1 bunch of basil, 1 or 2 garlic cloves (depends on your preference and how garlicky you like your pesto), some himalayan salt, either pine nuts or almonds or walnuts + extra virgin olive oil….and blend all together…i decided to add some lemon juice too…which i have to say, gave it that extra punch, that extra little kick…YUM! ๐
I can’t really decide which i prefer, i have really enjoyed eating all of them, either on pasta or even on some bread, makes for a great little pre-dinner snack ๐
Up next: rocket pesto and i think i’m going to do the same thing, use the rocket as a base and use different nuts to make different types of pesto’s…it’s dead easy! and Yummy! Get blending! ๐
